For the Disproportionate Restaurant we investigated a different range of ingredients. During Transnatural several chefs created a map of small ingredients and prepare a menu for The Incredible shrinking Man. Both were offered for tasting.

The premise for the research within the Disproportionate Restaurant is that it is very likely that we’ll see a new range of edible crops and Bonsai livestock flow into mainstream diet. Small fish, (singing) birds, insects, and mini fruits, mushrooms and vegetables will become commercially interesting. The 10 to 20% undersized vegetables, too small for European regulation, will no longer be left to rot on the field. Things like the already commercially available and very tiny Sinarapan will become more common. Perhaps a wider range of existing crops and livestock will be downsized a reversed proces of selective breeding.
